Eight years old.

Before there was Selah, there was a kid who wanted to make jerky.

My relationship with jerky goes back to age eight. A trip through Reading Terminal Market and its Amish-made jerky stayed with me; so did the desire to make my own. I wanted a dehydrator, and I wanted to understand how food could be transformed, kept, and carried forward.

That early curiosity grew into a practice. Over the years, the name on the idea changed: Dr Feel Good. This Is Jerky. 8that. Now, Selah.

Each name belongs to a different chapter. None of them changes the beginning. The work has always been about making something with intention, paying attention to texture and flavor, and treating a humble food with the respect it deserves.

Selah is the name that holds the story now. A new chapter for a practice that has been years in the making, with the same standard carried forward.
